Tea is produced from the Camellia Sinensis Sinensis and the Camellia Sinensis Assamica varieties. The plant can grow to the height of a tree depending on area and terrain or is kept as a bush which makes plucking easier. Tea leaves are graded depending on the part of the plant that it comes from. The top leaves are the most prized. They are the newest, most tender growth.
